Here's a complete and hefty one-pan dish. Prepping is a breeze, so this one's perfect for the harried cook.
Serves 6 Prep Time 20 minutes Total Cooking Time 70 minutes
2 red onions, sliced into 6 wedges each
2 white onions, sliced into 6 wedges each
2 carrots, sliced into 3-inch-long sticks
3 potatoes, sliced into 8 wedges
1/3 cup olive oil
1 teaspoons salt
1/8 teaspoon pepper
2 tablespoons rosemary, chopped roughly
1 cup cherry tomatoes
6 fresh pork sausage
1 Preheat oven to 350ºF.
2 In a roasting pan, place onions, carrots, and potatoes.
3 Drizzle vegetables with olive oil. Season with salt, pepper, and rosemary.
4 Toss well to combine.
5 Place in the oven and bake for 40 minutes.
6 Add tomatoes and pork sausage into pan. Bake for another 30 minutes.
7 Allow to cool for 10 to 15 minutes before serving.
