Sausage and Vegetable Bake

Sausage and Vegetable Bake

Here's a complete and hefty one-pan dish. Prepping is a breeze, so this one's perfect for the harried cook.

Serves 6 Prep Time 20 minutes Total Cooking Time 70 minutes

 

2 red onions, sliced into 6 wedges each
2 white onions, sliced into 6 wedges each
2 carrots, sliced into 3-inch-long sticks
3 potatoes, sliced into 8 wedges
1/3 cup olive oil
1 teaspoons salt
1/8 teaspoon pepper
2 tablespoons rosemary, chopped roughly
1 cup cherry tomatoes
6 fresh pork sausage

 

1  Preheat oven to 350ºF.

2  In a roasting pan, place onions, carrots, and potatoes.

3  Drizzle vegetables with olive oil. Season with salt, pepper, and rosemary.

Toss well to combine.

5  Place in the oven and bake for 40 minutes.

Add tomatoes and pork sausage into pan. Bake for another 30 minutes.

Allow to cool for 10 to 15 minutes before serving.

    i tried this one for dinner last night.. used the local longganisa for pork sausage & just used an oven toaster since i only cooked for 2. :) hubby ate loads of rice! success!

    hi, i saw in the photo a sliced garlic but i cannot find it in the list of ingredients or even mentioned in the procedure. thanks.

    will try this dish on weekend :)
