4 tablespoons olive oil, divided
1 small red bell pepper,
      sliced into 1/2-inch strips
1/3 yellow bell pepper,
      sliced into 1/2-inch strips
1/2 taspoon salt
1/2 white onion, sliced thinly
1/2 teaspoon sugar
700 grams kielbasa or
      any sausage of choice,
      sliced diagonally into 1/2-inch pieces
4 mini baguette, sliced in half and toasted
2 tablespoons mayonnaise
2 tablespoons Dijon mustard
8 pieces small gherkins,
      sliced in half lengthwise
sweet potato chips, to serve (optional)

 

In a large frying pan, heat 1 tablespoon oil. Saute bell peppers until tender, about 1 minute; season with salt. Set aside.

In the same pan, heat 1 tablespoon oil ans saute onions. Season with sugar and remaining salt; cook until onions are wilted and slightly caramelized, about 3 to 4 minutes. Set aside.

3  Heat 1 tablespoon oil using the same pan. add half of the sliced sausages and cook for about 3 to 4 minutes. Repeat with the remaining sausages.

To assemble, spread mayonnaise on the bottom half of the bread. Spread mustard on the top half. Arrange four pieces sliced gherkins on the bread. Fill with sliced sausages and top with sauteed bell peppers and onions. Repeat to make a total of four sandwiches. Serve with Homemade Sweet Potato Chips, if desired.
