The refreshing addition of tomato, avocado, and cucumber make this light salad a South Beach Phase 1 favorite!
Serves 2 Prep Time 10 minutes
1 (6-gram) can tuna in water
1/2 cup chopped cucumber
1/3 cup chopped tomato
1/3 cup chopped avocado
1/3 cup chopped celery
1/3 cup chopped radish
1 cup romaine lettuce leaves
For the dressing
4 teaspoons extra virgin olive oil
2 tablespoons lime juice
2 cloves garlic, chopped finely
1/2 teaspoon black pepper
1 Layer the tuna, cucumber, tomato, avocado, celery, radish, and lettuce in decorative glass bowls.
2 Make the dressing: Mix olive oil, lime juice, garlic, and pepper in another bowl. Serve on the side or drizzle on the salad.
