Your little ones will squeal with delight when they bite into these super yummy bars. Remember to pack a few extra pieces to share with their lunch buddies.
Makes 10 to 12 bars Prep Time 15 minutes Baking Time 45 to 55 minutes
For the crust
1 1/4 cups all-purpose flour
2/3 cup sugar
3/4 cup butter, cut into cubes and chilled
1/2 teaspoon vanilla extract
1 small egg, beaten
3/4 cup strawberry jam
1/2 cup semisweet chocolate chips
1 Preheat oven to 325ºF.
2 Make the crust: In a bowl, combine flour and sugar. Cut in butter until it resembles coarse crumbs. Add vanilla and lightly moisten the crumb mixture with the beaten egg.
3 Reserve 3/4 cup of the crumb mixture. Press down remaining mixture onto a 9x9-inch square pan. Bake for 10 to 15 minutes. Press down remaining mixture onto a 9x9-inch square pan. Bake for 10 to 15 minutes.
4 Spread strawberry jam, top with remaining crust mixture. Bake again for another 30 to 35 minutes.
5 Sprinkle chocolate chips on top and bake for another 5 minutes or until chocolate chips become glossy and a bit melted.
