These fruit bars are deliciously moist and have a gooey filling and a crunchy topping. Serve these with Earl Grey or English Breakfast tea.
Makes 24 (2x2-inch) bars Prep Time 15 minutes Baking Time 22 to 25 minutes
1 1/4 cups rolled oats
1 1/3 cups all-purpose flour, plus extra for sprinkling
1/2 teaspoon baking soda
1/2 cup butter, cubed
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon almond extract
1 (21-ounce) can strawberry filling
1/2 cup sliced almonds
1 Preheat oven to 350ºF. Grease the sides of an 8x12-inch baking pan.
2 Combine oats, flour, and baking soda in a bowl; set aside.
3 In another bowl, place butter and sugars and mix until softened.
4 Add egg, then the vanilla and almond extracts.
5 Add the dry ingredients and mix until it forms a soft dough.
6 Reserve a handful of the dough for the topping. Put the remaining dough in the prepared pan and spread dough to fill the whole bottom. Pat dough evenly. Sprinkle a little flour over the dough if it gets too sticky.
7 Pour the strawberry filling over the dough.
8 Sprinkle pieces of the remaining dough over the strawberry filling. Sprinkle sliced almonds over the mixture.
9 Bake for 22 to 25 minutes or until top is golden; let cool before slicing into 2x2-inch squares.
Make-ahead tip: the base and the topping are made of the same dough, and they can be made ahead of time and assembled as needed. In less than 30 minutes, they'll be ready!
Slicing tip: Cut them into 2x2-inch squares or 2x1-inch rectangles if you want smaller bites. Lastly, these bars are not sensitive to heat. They can be left out in room temperature and enjoyed as is.
