Bake this and the canapés together to save time. When you get to your destination, reheat in a toaster or a microwave.
Serves 4 Prep Time 10 minutes Cooking Time 10 minutes
16 large button mushrooms, stems removed
6 strips bacon
1 tablespoon garlic, finely minced
3 tablespoons flat leaf Italian parsley, finely minced
6 tablespoons olive oil
5 tablespoons grated mozzarella cheese
salt and pepper to taste
1 Preheat oven to 350ºF.
2 Fry bacon until crisp then chop into tiny pieces. Mix together with garlic and parsley.
3 Stuff mushrooms with the bacon mixture then top generously with grated cheese. Arrange mushrooms on a baking sheet and bake in the oven until cheese melts and turns golden brown. Sprinkle with minced parsley before serving.
