Add this new snack-or-dessert to your lineup of kid-friendly treats. Young palates are sure to appreciate the sweet batter and toasty marshmallows!
Serves 3 to 4
2 cups boiled local or Taiwan sweet potatoes
2 tablespoons butter
1 tablespoon brown sugar
1/2 cup all-purpose cream
1 cup large marshmallows
1 Preheat oven to 350ºF.
2 In a big bowl, mash boiled sweet potatoes using a masher or fork.
3 Add butter, sugar, and cream; mix well.
4 Spoon mixture into 3 to 4 medium ramekins or an 8x8-inch glass baking dish until half filled.
5 Cover completely with marshmallows. Bake until just browned or until marshmallows are puffed, about 5 minutes.
6 Cool then serve.
Healthy tip: You can make this gratin a little more health-friendly by substituting brown sugar with honey. For added flavor and a touch of spice, add a small amount of ground cinnamon to the batter.
