A glass of champagne in one hand, this special treat on the other.
Serves 4 to 6
2 cans tuna flakes in oil, drained
1/2 cup ranch dressing
(Make it from scratch: Low-fat Ranch Dressing recipe)
2 tablespoons mayonnaise
3 tablespoons chopped celery
1 teaspoon pickle relish
1 tablespoon chopped spring onions
a pinch of sugar
a few drops of truffle oil
salt and pepper to taste
1 large pack of potato chips

fresh shiitake mushroom slices for garnish
1 In a bowl, mix together tuna, ranch dressing, mayonnaise, celery, pickle relish, spring onions, sugar, and truffle oil. Season with salt and pepper to taste. Place in chiller until ready to serve.
2 To assemble, arrange potato chips in a single layer on a platter. Top with truffled tuna mixture. Garnish each with a fresh shiitake mushroom slice.
