Truffled Tuna on Potato Chips

Truffled Tuna on Potato Chips

A glass of champagne in one hand, this special treat on the other.

Serves 4 to 6

 

2 cans tuna flakes in oil, drained
1/2 cup ranch dressing
       (Make it from scratch:
       Low-fat Ranch Dressing recipe)

2 tablespoons mayonnaise
3 tablespoons chopped celery
1 teaspoon pickle relish
1 tablespoon chopped spring onions
a pinch of sugar
a few drops of truffle oil
salt and pepper to taste
1 large pack of potato chips

fresh shiitake mushroom slices for garnish

 

In a bowl, mix together tuna, ranch dressing, mayonnaise, celery, pickle relish, spring onions, sugar, and truffle oil. Season with salt and pepper to taste. Place in chiller until ready to serve.

To assemble, arrange potato chips in a single layer on a platter. Top with truffled tuna mixture. Garnish each with a fresh shiitake mushroom slice.
