The surprising addition of grapes gives a delightful crunch and juicy sweetness to this tuna treat. Try it with your favorite cheese and sliced cucumbers for extra flavor and fiber.
Makes 3 sandwiches Prep Time 15 minutes
1 (184-gram) can tuna in brine
4 tablespoons mayonnaise
1 cup seedless red grapes
1 medium onion, minced
pepper to taste
6 lettuce leaves
3 mini baguettes, sliced lengthwise
1 tablespoon mustard (optional)
1 Flake tuna and place in a mixing bowl. Add mayonnaise, grapes, and onions. Season to taste with pepper; mix well.
2 To assemble, put 2 lettuce leaves on the bottom half of a baguette. Spread mustard, if using. Spread 3 to 4 spoonfuls of tuna salad. Top with other baguette half.
