One of our all-time favorite pizza flavors gets a sinful and gooey sandwich makeover. This pairs perfectly with Tomato, Chorizo, and Chickpea Soup.

Makes 4 sandwiches Prep Time 10 minutes Cooking Time 10 minutes
For the caramelized onions
1 tablespoon olive oil
3 large yellow onions, sliced
For the sandwich
4 tablespoons unsalted butter, plus more for brushing
3 cloves garlic, peeled and minced
8 slices thick-cut white bread
4 slices Gruyère cheese
4 tablespoons caramelized onions
4 slices Cheddar cheese
4 slices mozzarella cheese
1 Make the caramelized onions: Heat olive oil in a pan. Place onions and sauté on low to medium heat, stirring occasionally, until soft and caramel brown in color. Set aside.
2 In a small saucepan, melt butter. Add garlic to infuse the flavor. Sauté just until garlic becomes soft and fragrant. Don’t allow the butter to turn brown. Set aside.
3 On 4 slices of white bread, place a slice of Gruyère cheese each. Next, spread a tablespoon of caramelized onions on each. Follow with a slice of Cheddar, a drizzling of the butter-garlic mixture, and a slice of mozzarella. Sandwich with another slice of bread.
4 Brush softened butter on each side of the sandwich. Place on panini grill or oven toaster until the cheeses have melted. Slice then serve.
