Make and share this grilled cheese sandwich recipe, it should be crispy and toasted on the outside and gooey with cheese in the inside. One of our all-time favorite pizza flavors gets a sinful and gooey sandwich makeover. This pairs perfectly with Tomato, Chorizo, and Chickpea Soup.

Makes 4 sandwiches

For the caramelized onion:

1 tablespoon olive oil
3 large yellow onions, sliced


For the sandwich:
4 tablespoons unsalted butter, plus more for brushing
3 cloves garlic, peeled and minced
8 slices thick-cut white bread4 slices Gruyère cheese
4 tablespoons caramelized onions
4 slices Cheddar cheese
4 slices mozzarella cheese


Make the caramelized onions: Heat olive oil in a pan. Place onions and sauté on low to medium heat, stirring occasionally, until soft and caramel brown in color. Set aside.

In a small saucepan, melt butter. Add garlic to infuse the flavor. Sauté just until garlic becomes soft and fragrant. Don’t allow the butter to turn brown. Set aside.

On 4 slices of white bread, place a slice of Gruyère cheese each. Next, spread a tablespoon of caramelized onions on each. Follow with a slice of Cheddar, a drizzling of the butter-garlic mixture, and a slice of mozzarella. Sandwich with another slice of bread.

Brush softened butter on each side of the sandwich. Place on panini grill or oven toaster until the cheeses have melted. Slice then serve.
