Strain 1/2 cup rice (pre-soaked in water overnight). Cook rice and 1/2 cup milk in a casserole over medium fire and stir.
When milk reduces and thickens, add another 1/2 cup. Keep adding until 3 1/2 cups milk or until rice is very soft.
Add 1/3 cup sugar, peel from half a lemon (minced), 1/8 teaspoon vanilla extract, and 1/2 cup chopped white chocolate. Cook again.
