1 Drink the Bugsy Blend
It's always nice to have a tall glass of freshly blended fruits. In your next glass, try including a third of a carrot to the mix to increase your fruit drink's nutritional value. We suggest you use mangoes and apples in healthy mix.
2 Sneak it into spaghetti sauce
When making your next batch of kiddie spaghetti sauce, try mixing in about 1 cup cooked and pureed carrots. It will give your spaghetti a touch of sweetness and your kids an extra dose of beta-carotene.
3 Salad brightener
Here's a new way to serve carrots in your salad: Peel a carrot and using a cheese slicer, create long, thin strips. Toss them with salad greens. It's that easy to bring color, crunch, and a wow factor to your plate.
4 Mix with your mash
In a large pot, place 1 kilo potatoes along with 4 to 5 medium-size carrots, all washed and peeled and cut into chunks. Fill the pot with cold water and bring to a boil. Lower heat and let them simmer until tender. Strain the liquid, mash, and season as usual.
5 Put a twist on hash browns
Preheat oven to 350 degrees F. Coarsely grate about 250 grams potatoes and 125 grams carrots and mix with 1 tablespoon lemon juice; drain. Add 1 lightly beaten egg, 1 1/2 tablespoons flour and about 1/2 teaspoon salt and pepper. Shape into hash browns. Fry in a nonstick pan with oil until browned and transfer to a baking sheet. Pop in the oven for about 10 minutes to cook through.
6 Make orange soup
In a pot over low heat, saute 1 sliced onion with 2 cups grated carrots and saute for 5 minutes with lid on. Puree mixture with 1/2 cup chicken stock and return to pot. Add 3 more cups chicken stock, 1 tablespoon tomato paste, and 1/3 cup coarsely chopped cashew nuts. Mix and serve hot.
7 Add carrots to rice
Saute a finely chopped onion in 1 tablespoon butter until it turns translucent. Add 1/2 cup shredded carrots, 1 teaspoon tomato paste, and salt and pepper to taste. In a rice pot, add 2 cups washed rice, 2 cups water, and 1/2 cup carrot juice (preferably fresh), along with the carrot-tomato mixture. Hit the button and cook!
8 Grill 'em!
The next time you barbecue, try adding peeled carrot halves to your grill to bring out their sweet, nutty, and smoky flavors. Simply drizzle with olive oil, season with salt and pepper, and grill for 5 minutes. Turn frequently and serve with grilled meats.
9 New take on fries
Take a break from your run-of-the-mill potato fries and use carrots instead! Preheat oven to 350 degrees F. In a bowl, toss washed, peeled, and sliced carrots with 3 tablespoons olive oil and about 2 tablespoons rosemary. Bake for 15 to 20 minutes on a shallow pan lined with foil and sprinkle with salt and pepper to taste.
10 Healthy munch
Make it a habit: Serve vegetable sticks before your main course. Peel jicama (singkamas), cucumbers, celery, and carrots and slice into bite-size sticks. Use a tasty ranch dressing or peanut sauce for dipping.
