Start with the eggs.
Separate 4 eggs, with the whites going to a large bowl. Set the yolks aside.
Briskly whisk the egg whites until they produce medium to stiff peaks. All that incorporated air is what makes an omelet look plush.
With a rubber spatula, fold in the egg yolks until just combined with the egg whites.
Transfer egg mixture into the same pan where omelet filling was sauteed. Spread evenly. When the bottom starts crusting (use a spatula to lift and peek), adjust to medium to low heat and let eggs cook till ready, but still light and pillowy. Add the filling.
Fold the egg and serve.
