One by one, dredge 10 to 12 slices mozzarella cheese (cut into 1-inch thick and 4-inch-long strips) in 1 1/2 cup all-purpose flour, then dip into 3 eggs (beaten).
Do this twice. (FYI, double coating the cheese prevents it from oozing out of its breadcrumb casing.) Then roll in 1 1/2 cups Japanese breadcrumbs.
Fry mozzarella cheese until golden.
Make the Honey Mustard Sauce: Mix 6 tablespoons Japanese mayonnaise, 1 tablespoon deli mustard, 2 tablespoons honey, 1 teaspoon hot sauce, 1/2 teaspoon garlic paste, 1 teaspoon fresh basil, chopped, salt and pepper to taste and set aside.
Make the Cilantro Lemon Mayonnaise: Just mix 6 tablespoons Japanese mayonnaise, 1 tablespoon cilantro leaves and stems (chopped), 1 1/2 teaspoon lemon juice, 1 teaspoon lemon zest, salt and pepper to taste and set aside. Serve cheese sticks with the two sauces.
