Clean that fish in three easy steps!

When buying, you can ask the fishmonger to gut and clean the fish and cut it in the size you need. But if you didn't, here's help in three easy steps!

1 Make a horizontal slit on the side of the belly and pull out the guts.

2 Using a pair of kitchen shears or scissors, cut off the gills and take it out with your fingers.

3 Run the back of a knife gently against the scales. (Or use a fish scaling tool.) Scale the fish in the sink or near running water to avoid the scales from flying everywhere.

4 Rinse the whole fish thoroughly.
