Here's a quick guide to skinning, deseeding, and quartering tomatoes!

Cut the deseeded tomato into strips and use it to top a plate of fresh salad greens. Or use the tomato strips or chunks to make this mango salsa to accompany your main fish of grilled chicken or fish.
Yield: 1 1/2 cups
1 cup diced fresh mango
1/3 cup roasted red peppers, drained and diced
1/3 cup red onion
1 jalapeno pepper, seeded and minced
2 tablespoons fresh mint, chopped
1 tablespoon fresh lime juice
Combine all ingredients and chill.
Serve as side dish.
Make and X on the tomato’s bottom.
Blanch tomato quickly in boiling water: Bring pot of cold water to a boil, just enough to cover a single layer of tomatoes and dunk tomatoes for 30 to 90 seconds. Add ice cubes, if needed to keep the water cold.
Using a paring knife, remove the skin of the tomato using the X mark as the opening point. Pull gently to peel the skin.
To deseed, cut each tomato into 4 wedges them simply push out the seeds using your thumb.
You can use the slices of deseeded tomatoes in side dishes or salads
