Baked Ham with Potatoes Ingredients:

For the caramelized onion and pineapple topping:

1 large white onion, thinly sliced
2 tablespoons unsalted butter
1/2 cup pineapple tidbits
1 teaspoon salt
Ground black pepper, to taste

For the cream sauce:

1 small white onion, diced
2 cloves garlic, minced
2 tablespoons unsalted butter
1 tablespoon all-purpose flour
1/2 cup chicken stock
1/2 cup all-purpose cream
Salt, to taste
Ground black pepper, to taste

500 grams potatoes, thinly sliced and parboiled for 10 minutes
150 grams CDO Premium Holiday Ham, diced
Spring onions, for topping

How to Make Baked Ham with Potatoes:

1. Make the caramelized onion and pineapple glaze: Heat medium pot over medium-high and sauté onions in butter until softened and slightly brown. Keep stirring to prevent onions from burning. Add the pineapple. Simmer until evaporated. Season to taste then set aside.

2. Make the cream sauce: Heat another small pot over medium heat and saute onions and garlic in butter until soft and fragrant. Sprinkle flour then mix through. Slowly add the liquids: chicken stock, and cream. Mix until sauce thickens. Add salt and pepper, to taste.

3. Preheat oven to 320 degrees F or 160 degrees C. Use a 9.75×7.5-inch oval baking dish. Evenly coat the bottom of the pan with butter. Place the sliced potatoes top with the cream sauce, add the onion and pineapple topping, then add the CDO Premium Holiday Ham. Bake for 20 minutes. Top with spring onions before serving.

Alternatives:

1. Instead of thinly sliced potatoes, boil and mash potatoes. Make the cream sauce without adding in the flour. Pour the cream sauce into the mashed potatoes.

2. Instead of pineapple for the topping, you may opt to make caramelized onions with mushrooms.

Tip: To prevent the ham from getting too crispy, cover the baking dish with foil
