Brown Butter is The Secret to Delicious Nutty Chocolate Chip Cookies

Brown butter is melted butter that is cooked until the milk solids have browned. It can also easily upgrade an already delicious cookie to a great one! 


According to Carmela Villegas-Agosta, executive pastry chef of Crisp on 28th, she puts this twist on her favorite chocolate chip cookie, by using browned butter, instead of regular butter, in her cookies. It's these browned bits that add a nice nutty flavor to the treat, she says. Plus, it's a delicious upgrade to add nuttiness without the addition of actual nuts, a lifesaving tip for those who have nut allergies.



So, how do you make brown butter? It's easy: melt a 1 cup of butter in a small saucepan over medium heat. Cook until the butter changes color from yellow to a light brown and releases a nutty aroma. Strain the butter and set aside to cool, about 10 minutes.


Then, just use as directed in your favorite chocolate chip recipe or any other recipe where butter is used. Voila! Instant nuttiness minus the nuts.
