
There are two kinds of brownies you can make: the cakey brownie and the fudgy brownie. The cakey brownie is similar to a cake but denser, more packed with ingredients than your usual light and fluffy cake layer. This is commonly made with a recipe that uses more flour and may even have a bit of leavening to give the impression of being lighter than your usual brownie.
The other kind of brownie, the fudgy brownie, is even denser than the cakey brownie. It’s commonly more intensely flavored and commonly seemingly underbaked to give the impression that it’s moist, gooey, and fudgy.
Whether you like fudgy brownies or cakey brownies, your recipe can use some extra gooeyness by using this ingredient: corn syrup.

Corn syrup is a thick, sweet liquid made from a mixture of cornstarch and either an acid or enzyme that transforms the cornstarch into a thickened mixture that is similar to honey. It’s also known as glucose syrup.
Corn syrup is easy to find! There are two kinds of corn syrup on the market: light corn syrup and dark corn syrup. Light corn syrup is corn syrup that has been clarified, its yellow tint removed so that it’s colorless and easier to use in many recipes without marring the color of the final dessert. It’s common to find this used in many recipes including brownies.
Dark corn syrup meanwhile is not clarified. It is commonly mixed with molasses for that darker caramel color and taste. It’s can be used interchangeably with light corn syrup but with the added benefit of that molasses flavor and color.
How do use corn syrup or glucose in brownie recipes? Just add 1 tablespoon corn syrup or glucose to the brownie batter before baking. That’s it! Plus, it’s affordable because you don’t need to use much for every batch you make. Corn syrup (500 ml) starts at P78 while glucose starts at P70 (750 ml). You can easily find corn syrup and sometimes glucose in supermarkets but you can also more readily source this ingredient at these online baking supply stores:
