Honey Lemon Cake Recipe
- Takes 65 minutesÂ
- Makes 8 servingsÂ
- 1 cup unsalted butter, softened
- 1/4 cup honey
- 3 large eggs
- 1 large egg yolk
- 1 teaspoon vanilla extract
- zest from 1 lemon
- 2 cups almond flour
- 1/4 teaspoon baking soda, sifted
- 1/2 cup all-purpose flour, siftedÂ
- For topping:
- 1/4 cup slivered almonds
- 1/4 cup honey
- 1 Heat the oven to 300 degrees F.
- 2 Grease and line with baking parchment an 8-inch cake pan. Set aside.
- 3 In a large bowl, cream the butter and the sugar until light and fluffy. Add and beat in the eggs, one at a time. Add the egg yolk. Add and stir in the vanilla and lemon zest. Then add and fold in the almond flour, baking soda, and flour until well mixed.
- 4 Transfer the batter into the prepared pan, and bake for 60 minutes. Remove from the oven and transfer to a cooling rack. Remove cake from the pan and discard parchment paper.Â
- 5Â Brush still warm cake with honey and top with almonds. Let cool completely before slicing and serving.Â
