Chocolate Cookies, Bananas, and Cream-This Ref Cake Is Such A Treat

This Choco Banana Ref Cake recipe is all about ease and fun in the kitchen. You can easily pick up all the ingredients you need at any grocery shop, and put together each individual layer in a snap.

Choco Banana Ref Cake Ingredients:
To make the crust:
25 pieces Cream-O Vanilla Cookies
8 tablespoons unsalted butter, melted
To make the filling:
1 1/2 cup semi-sweet chocolate chips
1 1/8 cups heavy cream
1 1/4 cups unsalted butter, at room temperature, cut into cubes
4 medium-sized bananas, sliced
To make the topping:
1/4 cup all-purpose cream
1 tablespoon powdered sugar, sifted
1/4 teaspoon vanilla extract
How to Make Choco Banana Ref Cake:
1 Make the crust: Crush the Cream-O Vanilla Cookies with a rolling pin until you have fine crumbs. Place the crumbs into a bowl, and stir in the butter to form a crumbly mixture.
2 Make the filling: Place the semi-sweet chocolate chips in a medium-sized mixing bowl. Set aside. In a small saucepan over light to medium heat, heat the heavy cream until small bubbles form on the sides. Pour the heavy cream over the chocolate chips and stir until smooth. Then gradually add the cubes of unsalted butter until completely smooth. Let the mixture cool and thicken until it reaches room temperature.
3 Make the topping: Whisk the all-purpose cream until thick and slightly fluffy. Add 1 tablespoon of powdered sugar and vanilla extract into the cream, and beat until thick. Chill for at least 30 minutes.
4 Assemble ref cake: Press half of the crust mixture onto the bottom of a square container. Place a layer of sliced bananas, half of the chocolate filling, and the other half of the crust mixture. Repeat with another layer of bananas and the remainder of the chocolate filling. Top off the ref cake with a layer of the whipped cream mixture.
5 Decorate cake with more banana slices and Cream-O Vanilla Cookies. Serve chilled.
