Fudgy BrowniesÂ
Takes 50 minutes
Makes 9 large squaresÂ
3 100-gram bars 60% chocolate, roughly chopped, dividedÂ
3/4 cup unsalted butter, melted
1 cup sugarÂ
2 large eggs
1 1/2 teaspoons vanilla extract
2/3 cup all-purpose flour
1/4 cup Dutch-processed cocoa powder
1/4 teaspoon salt
Butter, for greasingÂ
1
Preheat oven to 350°F. Lightly grease then line an 8x8-inch baking pan with parchment paper with an overhang for easy removal. Set aside.Â
2
Melt 1 1/2 bars chopped chocolate in a microwave-safe bowl on High in 30-second intervals, stirring, until completely melted. Set aside to cool slightly.
3
Meanwhile, in a large bowl with a wire whisk, add sugar and pour in melted butter and melted chocolate. Whisk together until combined. Add one egg and whisk until well mixed. Add the second egg and whisk again until mixture has thickened. Whisk in vanilla extract.Â
4Â
Sieve flour, cocoa powder, and salt over the bowl. Switch to a spatula, and gently fold in the flour mixture. (Do not over-mix.) Stir in another bar of chopped chocolate.Â
5
Pour or spoon batter into the prepared pan. Top with remaining 1/2 bar of chopped chocolate. Bake for 30 minutes or until the edges are firm but the center is still soft. Let cool completely on a wire rack. Run a knife around the sides without the parchment for easy removal. Lift from the pan and slice into squares.Â
