How To Make A Blueberry Cheesecake

Blueberries on a cheesecake is as classic a dessert pairing as you can get! When it comes to cheesecake, you can have it topped with other fruity compotes, jams, and pie fillings, but the blueberry topping is one of the most common and easily makes plain cheesecake stunning and delicious.

Blueberry Cheesecake Recipe 

  • Takes 30 minutes plus cooling and chilling 
  • Makes 6-inch cake 
  • 1 cup crushed graham crackers
  • 1/4 cup butter, melted
  • 2 tablespoons white sugar
  • 250 grams cream cheese, at room temperature
  • 1/2 cup sugar
  • 2 medium eggs
  • 1/2 cup heavy cream
  • juice from half a lemon
  • 1 tablespoon all-purpose flour
  • ready-made blueberry pie filling (for the topping)

  • 1 Preheat your oven to 400 degrees F or 205 degrees C. 

  • 2 Make the crust: Combine crushed graham, sugar, and butter in a bowl. Transfer to a greased and lined 6-inch round springform pan. Pat down evenly to form the crust then chill in the refrigerator.

  • 3 Alternatively, you can make your own graham cracker crumbs by finely processing the crackers in a food processor or a blender. Pulse until ground to a powder then proceed with the recipe.  

  • 4 Make the filling: Beat cream cheese in a bowl and add sugar. Add eggs one at a time then add heavy cream, lemon juice, and flour. Mix until well-combined.

  • 5 Pour the filling into the chilled crust. Wrap the springform pan with foil to prevent the water from seeping into the cake. Lightly tap the pan against the countertop to release any air bubbles. 

  • 6 Bake in a water bath at 400 degrees F or 205 degrees C for 10 minutes.

  • 7 Lower heat at 325 degrees F or 163 degrees C for another 30 to 40 minutes. Turn off the heat and leave the cake inside the oven for 1 hour. Take the cheesecake out of the oven and allow to completely cool on a wire rack.

  • 8 Refrigerate the cheesecake for at least 4 hours before serving. Unlock the hinge of the springform pan carefully to easily release the cheesecake from the pan.

  • 9 When ready to serve, top the cheesecake with blueberry filling before slicing and serving.

It doesn't have to end with a blueberry topping! You can swap out the pie filling for cherry pie filling, strawberry pie filling, or even making your own pie filling by simmering your choice of fresh fruits, chopped into chunks, in sugar until thickened and the mixture is of a jam-like consistency. (It will thicken even more when cooled.) Cool completely before using to top your cheesecake.
