WATCH: How to Make Frozen Brazo de Mercedes

This four-layered Filipino dessert recipe makes for the ultimate sweet treat!


This frozen Brazo de Mercedes is a must-try Filipino dessert. It has four layers made of a crisp crust, rich custard, cool and creamy ice cream, and a soft meringue layer making it a delightful and impressive sweet treat.


For the meringue:
6 egg whites
1/8 teaspoon cream of tartar
1/8 teaspoon salt
1/2 cup + 2 tablespoons sugar
confectioner's sugar, for dusting


For the custard:
8 egg yolks + 1 egg
1/2 cup condensed milk
1/4 cup butter
1/2 teaspoon vanilla


For the crust:
1 cup graham crackers, crushed
2 1/2 tablespoons sugar
6 tablespoons butter, melted
2 cups strawberry ice cream, softened

1 Make the meringue: Whisk egg whites until foamy. Add cream of tartar and salt. Gradually add sugar and continue whisking until stiff peaks form. Bake meringue in a 9x9-inch baking pan at 230F for 1 hour and 45 minutes. Leave the meringue to cool in the oven.



Make the custard layer: In a saucepan over low heat, whisk together condensed milk and eggs. Cook until the mixture thickens, stirring constantly. Add butter and vanilla extract. Whisk until well-combined. Allow the custard to cool.




Make the crust: In a bowl, combine graham crackers, sugar, and melted butter. Transfer into a 9-inch loaf pan and press onto the bottom. Chill the crust in the refrigerator.



Assemble the layers: Spread a layer of custard filling over the chilled crust. Chill until set then add a layer of softened ice cream. Chill layers again. Meanwhile, dust the meringue with confectioner's sugar and slice it to fit into the loaf pan. Place the meringue on top of the chilled ice cream layer. Place in the freezer and allow to freeze completely. freeze before unmolding.
