Homemade Oreos (Chocolate Sandwich Cookies)
Takes 50 minutes plus chilling and cooling
Makes 16 sandwich cookies
3/4 cup salted butter, softened
3/4 cup powdered sugar, sifted
2 teaspoons vanilla extract
1/4 cup unsweetened cocoa powder (we used black cocoa powder)
2 tablespoons cornstarch
1 cup plus 2 tablespoons all-purpose flour
1/2 cup salted butter, softened
1 cup powdered sugar
1 teaspoon vanilla
1 tablespoon heavy cream
1 Cream butter and sugar in the bowl of a mixer. Once creamed, add and beat in vanilla. Meanwhile, in another bowl, combine cocoa powder, cornstarch, flour in another bowl. Combine both mixtures on low speed. Gather dough into a ball and flatten into a disc, wrap in plastic wrap and refrigerate until firm, around 30-40 minutes.
2 Roll to 1/4-inch thickness, cut with cookie cutters, and transfer to a baking sheet with parchment paper. Bake at 325?F/160?C for 16 to 18 minutes. Cool completely on a wire rack.
3 Meanwhile, make Cream Filling: In a large bowl, cream butter and powdered sugar together until soft and fluffy. Add vanilla extract and heavy cream and beat until mixed. Set aside until ready to use.
4 To assemble, pipe or spoon filling onto the back of a chocolate cookie. Press another cookie to sandwich the filling. Repeat with remaining cookies and filling. Store in an airtight container.
