Lengua de gato are thin, snappy, Filipino butter cookies that are perfect for snacking. Pair with a cup of coffee for the ultimate treat!

Remember to pipe these cookies as thinly as possible by applying light, even pressure on the piping bag. We used a simple piping bag and snipped the corner to make 1-inch wide cookies. Once they go into the oven, keep an eye on them because they bake pretty quickly, too. Happy baking!

Lengua de Gato Recipe

Baking Time 10 minutes

Makes around 100 cookies 3-by-1-inch cookies

1 stick salted butter, softened

¾ cup powdered sugar, sifted

2 egg whites from 2 medium eggs

½ tsp vanilla extract

¾ cup plus 2 tablespoons all-purpose flour, sifted

Preheat the oven to 375°F. With a stand mixer or hand-held blender, blend the salted butter and powdered sugar on medium speed until the mixture is light and fluffy, around 3 minutes.

Add the egg whites and vanilla and mix on medium speed until the mixture is combined.

Add the flour and mix on low speed until the batter is smooth and uniform. Fill a piping bag with the batter and snip the corner to make a 1-inch opening.

Pipe thin layers, around 3 inches in length, onto a baking sheet lined with parchment paper. Bake for 10 minutes or until the edges turn golden brown and the cookies are crisp.
