WATCH: How to Make Ube Bibingka
You will love this flavor twist on traditional bibingka! The basic recipe just needs is a dash of ube flavoring, and you're all set. Feel free to add cheese, salted egg slices, coconut, or a sprinkle of coconut sugar on top of these baked treats once they come out of the oven.
Ube Bibingka Recipe
Makes 4
¾ cup rice flour
½ cup all-purpose flour
¼ cup sugar
2 teaspoons baking powder
¼ teaspoon salt
2 medium eggs
½ cup coconut cream
½ teaspoon ube flavoring (we used McCormick)
½ cup cheddar cheese, for topping

Preheat oven to 400°F. Grease 4 (4-inch) fluted pie pans or mamon molds with unsalted butter.

Whisk together rice flour, all-purpose flour, sugar, baking powder, and salt in a large bowl until combined; make a well in the center.

Whisk together eggs, coconut cream, and ube flavoring in another bowl; pour into the well and stir until just combined. Divide batter among pans. Evenly divide cheddar cheese on top of bibingka. Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted in the center of a piece comes out clean. Serve warm.
