Making bread doesn't have to be the intimidating baking project you give up on. Yes, yeast may be an intimidating ingredient to use for experienced bakers as well as new bakers. If you don't have yeast, you can do two things: you can create a wild sourdough yeast starter if you have the patience to wait at least 5 days or you can make bread that doesn't use yeast at all

Yes! You read that right. You can make bread without using yeast at all. This kind of bread is a kind of quick bread recipe because it doesn't need to rise, it doesn't need to rest, and it doesn't need hours to make!   

This recipe is called the Irish soda bread. Instead of using yeast to leaven or to make the bread rise in the oven, baking soda is used as the rising agent. If you have ever used baking soda in any baking project, you know that it bubbles up when it's exposed to an acid such as vinegar, lemon juice, or even natural cocoa powder.

For this bread recipe, the baking soda needs an acid to activate and this is where homemade buttermilk comes in. (You can use store-bought buttermilk but it is hard to find.) You'll be glad to know that you can make a suitable buttermilk substitute that not only works well in your recipes, but it is also super easy to make. You only need 2 ingredients to this from scratch: just mix fresh milk and vinegar.

Once you have your homemade buttermilk, all you have to do is add all-purpose flour, baking soda, and some salt for seasoning.
