WATCH: How to Make Fortune Cookies

 

Chinese New Year is here, meaning it's the perfect time to hand out fortune cookies to your friends to wish them good luck this year! We made an easy fortune cookie recipe that you can make with the kids, too. Remember to work fast when making these-the cookies set and harden in a matter of seconds! Instead of filling up a whole baking pan with batter, it is better to bake 3 to 4 at a time only.

 

Fortune Cookies Recipe

Makes 13 cookies 

 

½ cup all-purpose flour

2 tablespoons rice flour

1 teaspoon cornstarch

½ cup caster sugar

2 egg whites from 2 medium eggs

3 tablespoons cooking oil

1 tablespoon plus 2 teaspoons water

Preheat the oven to 350°F. Print out fortunes on bond paper, cut into pieces, and set aside. In a medium-sized bowl, lightly whip the egg whites to break them up and until slightly frothy. Set aside.

In a separate bowl, mix the all-purpose flour, rice flour, cornstarch, and sugar together. Create a well in the middle and pour in the water and oil. Mix until combined.

Add half of the egg whites and mix into the batter to lighten it up. Add the second half and mix until completely smooth.

Scoop by rounded tablespoons onto a baking sheet lined with a Silpat or parchment paper. Smoothen out with an offset spatula to create an even circle at least 4 inches in diameter.

Bake for 8 to 10 minutes or until the edges turn golden brown. Flip each cookie over, place a fortune in the middle, and use tongs to fold the cookie in half. Press the middle of that fold onto the edge or a bowl or glass to seal, then let the cookie set in a muffin pan so that it holds its shape as it cools.
