When it comes to baking chocolate cakes, there is one ingredient that every home baker needs to try in putting one together: yogurt.

 

This moist and tender chocolate layer cake is low in fat thanks to the use of yogurt and reduced-fat cream cheese.

 

In baking any cake, fat (like butter, oil, yogurt, and sour cream) plays a big role in keeping the baked cake soft and moist, mostly because of its ability to retain moisture. The great thing about using plain, sour yogurt in a chocolate cake, however, is how both chocolate and yogurt yield great results in giving cakes structure and body.

 

The brown butter muscovado glaze adds the sweet notes to this decadent cupcake.

 

Both chocolate and yogurt are acidic in nature and react to leavening agents in the batter, contributing to a good rise and sturdy structures. Naturally-occurring stabilizers present in yogurt help retain moisture in baked cakes, too!
