Not all cookies are created equal. Here’s a quick guide on how to make and bake cookies just the way you like ‘em: 


If you want crispy cookies:

Use granulated white sugar.

Use butter as fat.

Bake cookies completely.

Store properly in air-tight containers.



If you want soft cookies:

Use brown sugar, honey, or molasses as sweeteners.

Underbake by a few minutes.

Bake in large thick sizes.

Store properly by wrapping tightly with plastic wrap.



If you want cakey and puffy cookies:

Add an egg.

Use cake or pastry flour.
