Spam Fried Rice
1 Heat 1 tablespoon vegetable oil in a frying pan or wok. Add 2 cloves garlic (minced) and 1 cup diced Spam. Cook until light golden brown.
 
2 Add 1 ½ cup frozen corn, peas and carrots. Cook until tender, about 2 minutes.
 
3 Add 3 cups cooked rice and toss to combine.
 
4 Season with 1½ tablespoon soy sauce, ½ tablespoon fish sauce, ¼ teaspoon sesame oil. Toss to combine.
 
5 Season with salt and pepper. Top with sliced green onions.
 
 
Kimchi Fried Rice
1 Heat 1 tablespoon vegetable oil in a frying pan or wok. Cook 6 slices bacon (chopped).
 
2 Add ¾ cup chopped kimchi and saute for a few minutes.
 
3 Add 3 cups cooked rice and toss to combine.
 
4 Season with 1 tablespoon kimchi juice (optional for heat), salt, and pepper. Toss to combine.
 
5 Top with nori strips.
 
 
Crab Fat Fried Rice
1 Soak 1 teaspoon atsuete in 3 tablespoons hot water; strain out seeds.
 
2 Heat 1 tablespoon olive oil in a frying pan or wok. Add 1 tablespoon minced garlic and 1/3 cup crab fat. When mixture starts to bubble, add atsuete juice.
 
3 Add 3 cups cooked rice and toss to until rice is fully coated.
 
4 Season with salt and pepper, and serve with calamansi.
 
 
Longganisa Hash Fried Rice
1 Heat 2 tablespoons olive oil in frying pan or wok. Saute 2 tablespoons minced garlic and ½ white onion (chopped) until softened.
 
2 Add 250 grams longganisa and cook for 5 minutes until slightly toasted. Add 1 cup diced potatoes and cook until softened.
 
3 Add 3 cups cooked rice and toss to combine.
 
4 Season with salt and pepper. Top with crispy garlic.
