The key to crispy fish with a delicious but crisp breading is all in the preparation. You can choose to dunk your fish in a batter like tempura or coat it in layers of breading that preserve the tender fish as it cooks in the hot oil.

1 Fish Tempura Recipe 

Tempura batter is a batter that develops into a delicate but crisp coating for food. It's fantastic for delicate fish. These tiny filleted fish called asuhos or whiting are a great alternative to expensive prawns and the endangered tawilis. You can find these fish already prepared, filleted and gutted, in the frozen food section of your supermarket and in Japanese groceries. You can also also dip bigger cuts of fish fillet in the batter and place it in between bread slices for a burger that's lighter and crisper than your usual.

2 Cracker-Crusted Fish Fillet Recipe 

Crackers are delicious on their own so when you add it as the coating of fish, the resulting fish meal you'll have has the crunch and taste of the crackers you used. Crush it finely or keep it chunky so when it's fried, it maintains the crunch that crackers are known to have.

5 Thai Fish Cakes Recipe 

The ingredients list may be long but the fish cakes are a marvelous appetizer! The crispy outside is courtesy of Japanese Panko breadcrumbs but if you're not a fan of the spicy flavors, you can leave it out and make a fish katsu instead. The katsu is just like a fish cake but instead of making a patty from ingredients, it's a simple fish breaded with the Panko. It's the curry sauce that makes it super tasty!

Dilis are tiny fish that are sun dried. These become super crispy when fried! To level up this ulam but maintain the crispness of the fish, these are tossed in a spicy saucy mix that make it sticky and spicy when fried. 7 Fish Po'boy Recipe 

A "po'boy" is a crunchy sandwich from the southern United States that is courtesy of the cornmeal included in the coating. Cornmeal is ground but it's not as fine as flour so it still retains some crunch from the hard corn. When fried, these cormeal-coated fish develop a crisp exterior. Serve it in buns that also have a soft interior with a crusty outside for superior crunch.
