7 Fish Po'boy RecipeÂ
A "po'boy" is a crunchy sandwich from the southern United States that is courtesy of the cornmeal included in the coating. Cornmeal is ground but it's not as fine as flour so it still retains some crunch from the hard corn. When fried, these cormeal-coated fish develop a crisp exterior.
