4 cloves garlic, minced
2 large bell peppers, diced
1 medium broccoli, chopped into florets
1 large zucchini, sliced thinly into half moons
5 large shiitake mushrooms, stems removed and sliced thinly (or 1/2 cups sliced fresh mushrooms)
2 tablespoons coconut oil or extra virgin olive oil
1 tablespoon milk chili powder
2 tablespoons ground cumin
1 tablespoon dried oregano
salt and pepper
2/3 cups Healthy You Brown Rice
1/2 cup chopped cilantro
Juice and zest from 1 large lemon or lime
Salt

1 Preheat oven to 400 degrees Farenheit.
2 To make the roasted vegetables and mushrooms, toss together all ingredients in a bowl, transfer to a large baking sheet and roast in preheated oven for 30 minutes. Set aside.
3 Cook Healthy You Brown Rice according to package.
4 Toss roasted vegetables and mushrooms including the brown rice in a bowl.
5 Add cilantro, lemon juice and zest.
6 Season with salt and pepper to taste.
