Adding bacon to mashed potatoes is a no-brainer. This mashed potato recipe takes less than an hour to prepare, especially as you can cook the bacon and onions while waiting for the potatoes to get tender. You can use any herb you like - basil, thyme, rosemary, oregano, or Italian seasoning will work - or even a generous dash of paprika or powdered garlic will do!

Herbs and Bacon Mashed Potato Ingredients 

  • 400 grams potatoes, cut into chunks
  • 1/4 cup bacon strips, cooked until crispy
  • 1 red onion, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh mixed herbs, chopped
  • salt, to taste 
  • ground pepper, to taste

How To Make Herbs and Bacon Mashed Potato

  • 1 Boil the potatoes in salted water until tender. Drain and keep warm.
  • 2 Using a whisk, gently crush the potatoes but do not mash. Mix well.
  • 3 To the cooked bacon, add onions, then cooked potatoes.
  • 4 Add olive oil, herbs, and seasoning. Mix well and serve.

Pommes Duchesse Recipe

We all know that the French know their way around a kitchen, and it comes as no surprise that even their mashed potato recipe is a cut above the rest. This French mashed potato recipe adds a simple step: baking. This allows the piped potato mixture to form a beautiful crust, which adds a light but deep roasted flavor to the mashed potatoes.

Pommes Duchesse Ingredients

  • 1 kilo potatoes, cut into chunks
  • 2 tablespoons unsalted butter
  • 2 large egg yolks
  • salt, to taste
  • pepper, to taste

How To Make Pommes Duchesse

  • 1 Peel, boil, and mash the potatoes.
  • 2 Mix in butter, then the egg yolks. Season with salt and pepper.
  • 3 Using a pastry bag with a large piping tip, pipe mixture onto a lightly greased baking pan.
  • 4 Bake in a preheated oven at 400ºF (200ºC) until lightly browned.

Mashed Potato with Garlic and Chives Recipe 

Mashed potatoes are classic comfort food, and what makes it spectacular is its simplicity. Leveling up a creamy mashed potato recipe doesn't have to be complicated either! With the addition of chives and garlic to this mashed potato recipe, you add a new dimension to its flavor profile.

Mashed Potato with Garlic and Chives Ingredients

  • 1 kilo potatoes, peeled
  • 2 cloves garlic, peeled
  • 1/2 teaspoon salt
  • 8 tablespoons warm milk
  • 8 tablespoons soft unsalted butter
  • salt, to taste
  • ground pepper, to taste
  • 2 tablespoons chives, chopped

How To Make Mashed Potato with Garlic and Chives

  • 1 Place potatoes in a pot with enough water to cover the potatoes. Mix in salt and garlic, and bring water to a boil. Reduce heat. Simmer, covered, for 15 to 20 minutes. Drain.
  • 2 Put the potatoes and boiled garlic cloves through a potato ricer and into a bowl.
  • 3 Stir in milk and butter using a whisk. (Don't over mix or the potatoes will become gluey.) Season with salt and pepper.
  • 4 Stir in chives and serve.
