Callos is a favorite holiday food. It's a hearty Spanish stew traditionally made with bite-sized pieces of tenderized beef tripe, chunks of ham, slices of Chorizo de Bilbao, and dotted with chickpeas or garbanzos in a richly flavored spiced tomato sauce.
