2 Garlic Cream Cheese and Mushroom Spread Recipe 

There isn't any shame in covering up the taste of vegetables with ingredients that you love. Here some earthy mushrooms are chopped up and briefly sauteed in some oil before being mixed with fresh garlic, lemon juice, and cream cheese for a mixture that you can spread onto bread, toast, or crackers for a quick snack at midnight. Stir in caramelized onions for a level-up version that won't have you reaching for the premade stuff.

5 Baby Potato Salad Recipe 

When it comes to making potato salad, it's the cooking of these spuds is what takes time. You can slash the cooking time drastically by turning to an appliance that many of us overlook: the microwave. The microwave can cook a medium potato in about 3 minutes! Imagine how fast it can cook these baby potatoes. Here's how you do it:

  1. 1. Put the potatoes in a microwave-safe bowl with water that reaches a quarter of the way up and cover with a wet paper towel or a lid.
  2. 2. Microwave for 3 minutes, turning the potatoes halfway through for the most even cooking.
  3. 3. Cook an additional minute or two if needed until all the potatoes are tender and cooked through.  

In the time the potatoes are cooking, you can toss the remaining ingredients together into a big bowl, ready to coat the potatoes as soon as they're done.

The best reason to have more vegetables is really the ease with how fast it can be prepared. Few need much time being cooked and some actually just need to be heated up to be delicious. Some are already super delicious straight from the bottle! Here, sundried tomatoes is all you need to add a punch of flavor to a simple pasta sauce. The pasta takes longer to cook than it does to heat up the ingredients needed for the sauce.
