Classic tocino flavors are replicated for a chicken version, instead of pork. This means less time is needed for tenderizing the meat. You can leave the chicken in the marinade in as little as an hour (just to let the marinade sink into the meat) or as long as overnight. Either way, a sweet, hearty breakfast is just a few minutes away.Â

Takes 1 hour 15 minutes
Makes 6 to 8 servings

1 kilo boneless chicken thighs, skins removed
3 tablespoons garlic, peeled, finely minced
1/2 tablespoon salt
1/2 teaspoon black pepper
3 tablespoons brown sugar
2/3 cup pineapple juice
2 teaspoons soy sauce
2 tablespoons oil
Fried garlic rice, to serve
Fried egg, to serve

Using paper towels, pat chicken thighs dry. Place chicken in a large bowl.

Add garlic, salt, ground pepper, brown sugar, pineapple juice, and soy sauce to the chicken thighs. Stir to mix thoroughly. Let stand at room temperature for 1 hour.

In a nonstick pan over medium heat, heat oil then fry chicken until browned and lightly charred. Serve with fried garlic rice, sautéed tomatoes, and sunny-side up egg.Â
