Think of tokwa, or tofu, as a sponge-it's all about soaking it in flavor. This makes tofu a flavor "chameleon." It can easily blend into the flavors of a dish while adding texture. We have a few tips so you can unleash tofu that has the potential to be amazing.

1 Dry tofu.

As mentioned before, tofu are like sponges. Just like sponges, it can soak up all sorts of flavorful liquids but on a certain condition: it needs to be relatively dry. When you buy tofu, it's usually in a liquid. Just strain out this liquid before using.

2 Press more liquid out from firm tofu.

If it's medium-firm tofu to extra firm, you can tofu dry out even further.  Just be careful when handling medium firm tofu as it will easily crumble. What you do is get paper towels and gently press out as much liquid as possible.

For extra firm tofu, you can place a weight on it to dry it out further. This will guarantee delicious tofu that will absorb maximum flavor from the liquid it's soaked in. To do this, you just need to do this a little in advance. Here's what to do:

  1. 1 Drain the tofu, then slice it lengthwise.
  2. 2 Place a layer of tofu on a tray lined with at least two layers of paper towels or a clean folded kitchen towel.
  3. 3 Cover the tofu with another layer of paper towels or kitchen towel.
  4. 4 Place another tray on top and weigh it all down with some heavy pots and pans.
  5. 5 Leave it for thirty minutes or more before using.

3 Marinate it.

Drying your tofu is just the first step. You've essentially taken out as much water as you can squeeze out of it, so it's time to replace it with a more flavorful liquid. Your tofu will suck up anything without oil. Delicious kinds of vinegar, ciders, seasoning, and juices will all make for more delicious tofu. Simply marinate your tofu for half an hour to overnight in your marinating liquid.

4 Stir-fry it.

As you sauté ingredients, from the veggies to the meats, their juices will come out. Guess what's going to absorb all that flavor? Tofu! That's what makes tofu such a great addition to stir-fried dishes.

5 Grill tofu.

Add smoky flavors to your tofu by taking out that grill and using it to cook tofu. (Yes. Try it.) It's a unique cooking method for tofu but it's a good idea. You can even skewer tofu between your meat and veggies as it will add tenderness and flavor to your stick.
