How To Cook Scallops + Recipes To Try

These are sweet and juicy seafood morsels.

Scallops are a kind of clam. What's interesting is that the scallops we know and eat are the white round muscle that holds the shell together. This isn't always the part of clams that you think to eat.  

There are two kinds of scallops that are you can find in the supermarket: the small ones and the large ones. The small scallop is from a local sea scallop. These are normally up to 1 centimeter in diameter and is quite small compared to the imported bay scallops. The big bay scallops can grow 1 inch and are larger in diameter. 

Whichever you have, scallops are sweet, juicy, and totally succulent when cooked right. The key here is to remember that it's a shellfish and is best when cooked just right so you can prevent it from becoming tough to eat. If you cook shrimps often, you should be able to cook scallops quite perfectly, too.

  1. 1 Season scallops on both sides with salt and a little ground pepper if desired.
  2. 2 Melt enough butter in a frying pan over medium-high heat to cover the bottom of the pan. 
  3. 3 Once butter stops frothing, place scallops in the pan.
  4. 4 Sear the scallops, about 1 minute depending on the size or until the scallops easily release from the pan. Flip and sear the other side. 
  5. 5  Remove from the pan and serve immediately.

If you have particularly small scallops, you might want to stir fry the scallops instead to prevent overcooking them. Just season the scallops and to a searing hot wok or saute pan, melt the butter or oil and add the small-sized scallops straight in. Toss gently to evenly cook the scallops, cooking the scallops around 1 minute before removing the scallops from the pan and setting it aside on a plate. Cook your remaining ingredients if any and toss everything quickly together before serving.

The sub is really just a long bread roll that you can stuff with your favorite fillings. In this case, shrimps and scallops that have been lightly poached in a flavored water, also known as a court bouillon. (You can also use shrimp stock.) These gently cooked seafood are tossed in a mayonnaise dressing for a creamy bite each time.
