WATCH: How To Make Chicken Noodle Soup

This is an Asian version of the chicken noodle soup you love!

 

You're going to want to make this Asian-style chicken noodles soup at home because you'll create a delicious and comforting chicken soup that's perfect for the unexpected rainy days. The warmth of flavor in chicken soup is wonderfully complemented with the fresh flavor from the lime juice. You'll want to slurp every drop of this soup! 

 

Chicken Noodle Soup

 

Takes 35 minutes

Makes 4 servings

 

8 cups chicken stock

400 grams skinless chicken breast fillets 

4 pieces star anise

2 pieces bay leaf

3 tablespoons fish sauce (patis)

400 grams wide rice noodles, soaked in water until soft, drained

3 tablespoons lime juice, or more to taste

4 tablespoons cilantro (wansoy) leaves

Lime wedges, to serve

 

1 Bring chicken broth to a boil in a sauce pot. Add chicken fillet and let cook for about 3 to 4 minutes.

 

2 Remove chicken from pot; set aside to cool slightly. Continue to simmer stock. Shred chicken and set aside.

 

3 Add star anise, bay leaves, and fish sauce to pot. Add noodles and shredded chicken. Transfer to bowls. Season with lime juice. Top with cilantro and chopped and fried shallots if desired. Serve with more lime wedges on the side.
