WATCH: How to Make Biko
Biko is a popular Filipino dessert or merienda made with sticky rice (malagkit), brown sugar and coconut milk. This version has a tangy twist from the calamansi rind. Top it off with latik (reduced and browned coconut milk) for extra flavor!
1 Cook the sticky rice with 2 cups of water.
2 Make the latik: Simmer 1/2 cup coconut milk until brown and completely reduced. Drain the coconut oil.
3 In another pan, combine the coconut milk, sugar and calamansi rind. Add the cooked sticky rice and mix until well-combined.
4 Transfer onto a pan lined with banana leaves. Let cool.
5 Cut into squares, top with the latik, and enjoy!
