WATCH: How to Make Fried Chicken with Cheese Dip
Dip perfectly-fried chicken chunks in gooey, melty cheese.
Love the chicken-and-cheese combo? You can make this restaurant-style dish at home! All you need are a few ingredients, fry your chicken chunks twice (this makes a difference!) and make the cheese dip on your stovetop. You can use any kind of cheese you prefer but add a bit of mozzarella cheese to get that gooey, melty texture. Prep this on a weekend—your family will thank you for it.
Fried Chicken with Cheese Dip
1 kilograms boneless chicken thigh, cut into cubes
For the marinade and glaze:
1/2 cup soy sauce
3 tablespoons rice vinegar
1 tablespoon ginger, grated
1 tablespoon garlic, grated
1/4 cup white sugar
1 tablespoon sesame oil
2 cups all-purpose flour
salt, to taste
pepper, to taste
3 medium-sized eggs, beaten
2 cups rice flour
Oil, for frying
1 tablespoon butter
1 tablespoon all-purpose flour
2 cups milk
1 cup quick-melting cheese, diced
1 cup cheddar cheese, diced
1 cup mozzarella cheese, diced
sesame seeds, for topping
1 In a bowl, mix together all ingredients for the marinade until sugar completely dissolves. Marinade the chicken for at least 1 hour with half of the soy mixture, saving the other half for the glaze.
Place flour, eggs and rice flour in individual bowls. Season each with salt and pepper. Dredge marinated chicken in flour-egg-rice flour.
3 Heat oil in pan over medium heat. Fry chicken for about 3-5 minutes. Drain on paper towels. Turn up the heat to medium-high and fry again for another 1 minute. Place in a cooling rack.
4 Heat another pan over medium heat, pour in the remaining soy mixture and add water. Simmer for about 5 minutes or until sauce reduced. Turn off heat. Add chicken in the pan and mix until well coated.
5 Make the cheese dip: Melt butter in a medium-sized pan over low heat. Add all-purpose flour and milk, and constantly mixing to combine, Gradually add milk and cheese, while mixing. Add in the mozzarella cheese last. Season with salt and pepper. Mix until cheese has melted. Take off heat.
6 To serve: Plate chicken and top with sesame seeds. Serve with melted cheese immediately.
