Merienda is better with this cheesy dip! We used a variety of cheeses (quick-melting cheese and sharp Cheddar cheese) to make this extra flavorful. Cilantro adds bright flavors and tempers the heat from the chilies. Sooo good!Â

Chili con Queso Dip RecipeÂ
Serves 6
Prep Time 20 minutes
Cooking Time 20 minutes
1 tablespoon vegetable oil
2 tablespoons butter
1 white onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
3 green finger chilies, sliced into rounds
2 tablespoons all-purpose flour
1½ cups fresh milk
2 cups cubed cheddar cheese (we used a mix of processed quick-melting and sharp Cheddar)
2 teaspoons salt
2 medium tomatoes, deseeded and chopped
2 tablespoons chopped cilantro
nacho chips and lemon slices, to serve
1 Heat oil and melt butter in a heavy-bottomed pot over medium heat.
2 Saute onions until light brown. Add garlic, bell pepper, and chilies; sauté for about 3 minutes.
3 Add flour and stir for 1 minute. Pour in milk and simmer for 1 minute.
4 Add cheese and stir until melted. Remove from heat.
5 Stir in salt, tomatoes, and cilantro. Serve immediately with nacho chips and lemon slices.
