With two ingredients—heavy cream plus good quality chocolate—and the right proportions you can enjoy ganache as a velvety glaze over a cake, as a delightful frosting for layer cakes, or melt-in-your-mouth truffles. Here's a guide to making the perfect ganache for your desserts:

 

What You'll Need:
Heavy cream
Good quality chocolate

 

Procedure:
1 Heat the cream in a saucepan over medium heat until it simmers.

2 Pour the heated cream over chopped chocolate and mix with a wire whisk until smooth and well-combined.

 

Mind the Proportions:

Basic Ganache
1 : 1 - Mix equal parts chocolate and heavy cream to make a thick glaze perfect for topping cakes and filling layer cakes.

 

Pourable Ganache
1 : 2 - Mix one part chocolate to two parts heavy cream to use as a velvety pourable glaze for cakes, cupcakes, as ice cream topping, or as a dip for cookies, etc.

 

Chocolate Truffles
2: 1 - Mix two parts chocolate to one part heavy cream for rich and decadent chocolate truffles.
