Delicate, delightful crepes are easy-to-make at home. Master this basic crepe recipe and top them however you like.
Prefer savory crepes? Omit the vanilla and sugar, then season the batter with salt.
2 large eggs
2 tablespoons sugar
1 cup water
3/4 cup milk
1 cup all-purpose flour
1 tablespoon vanilla extract
3 tablespoons butter, melted
Butter, for frying and to serve

1 In a large bowl, beat eggs, sugar, water, and milk. Add flour and mix until just combined then mix in the vanilla extract and melted butter.
2 Strain batter through a strainer to remove lumps. Chill for 30 minutes.
3 Heat a nonstick frying pan over and lightly coat it with butter. Pour in batter and swirl the mixture to coat the surface. Cook until just edges are dry and set, about 30 seconds. Flip and cook a few more seconds. Remove from pan and transfer to serving plate. Repeat with remaining batter.
4 Spread with your desired filling, and serve immediately.
TIP: Use a light enough pan to handle with ease using one hand and butter it well. You can also make crepes in advance, just place them between waxed paper, and freeze until ready to eat. Just warm up, and serve.
