WATCH: How to Make Crispy Pata

Filipinos love this golden and crisp pork dish!

 

Crispy pata is a popular Filipino pork dish that is deep-fried until perfectly golden and incredibly crispy. Preparing this dish is easy and it is best eaten with soy-vinegar dipping sauce.

 

1 whole pata (pork knuckle), cleaned
Salt and pepper to taste
Cooking oil for frying

In a pot, add enough water that can cover most of the pork knuckle (pata). Season with salt and pepper.


2 Boil the pork for about an hour or until tender.


3 Add more water if needed.


4 Remove the pork from the water.


5 Pat the pork dry then keep in the freezer overnight.


6 Deep fry the frozen pork until the skin is crisp and golden brown.


7 Serve with soy-vinegar dipping sauce.
