Kamote Cue is an all-time favorite Filipino merienda. Skewered deep-fried sweet potatoes are coated with caramelized brown sugar. Give in and snack on this sweet homemade treat on a stick!
Kamote (Sweet Potato), peeled and sliced into 1/2-inch slices
Brown sugar
Oil, for deep-frying
Bamboo skewers

Peel and cut the kamote into 1/2-inch slices.
2 In a saucepan, heat the oil and add brown sugar.
3 When the brown sugar melts and floats to the surface, carefully add the kamote slices.
4 Flip the kamote slices to let the caramel coat. If preferred, sprinkle more brown sugar.
6 Cook the kamote slices until tender.
7 Thread glazed kamote slices on bamboo skewers.
