WATCH: How to Make Mango Suman Sushi
Mangoes are in season! Use them in this easy + delicious suman snack.
Suman, a merienda treat made with glutinous rice and coconut milk, can be used to make these fun and delicious take on Pinoy sushi. Sweet mangoes complement the classic combo of suman and mangga.
MANGO SUMAN SUSHI
Prep time 10 minutes
Cooking time 10 minutes
1 cup black and white sesame seeds
80 gms muscovado sugar
4 pieces suman
mango flesh from 2 ripe mangoes, diced
50 gms white sugar
10 ml Shoktong (Chinese medicinal wine) or rum
1 Roast sesame seeds for 2-3 minutes. Take off from heat and let cool. Add muscovado sugar and mix well. Set aside.
2 Coat sides of suman with sesame seed-and-sugar mixture. Cut suman into sushi size.
3 Caramelize white sugar and water. Add mangoes and flambé with shoktong. Season with salt.
4 Top suman sushi with flambéed mangoes.
